Today was the first day, since I started the raw food diet, that I had to work not from home, but from the office.
I was wondering how I’d survive the day without my fridge and the VitaMix, but it turned out to be very easy. In the morning, I packed my cooler lunch bag with all kinds of goodies, but then ended up bringing most of them back home.
One of those goodies was a raw brownie I bought the other day.
Go Fudge raw brownie
This one was made from almonds, cacao, cashews, agave, vanilla, and salt. Many raw desserts of this type have a chewy texture, in most cases due to dates being used in a recipe, but this raw brownie was surprisingly crunchy. It tasted very good, too.
Good thing I have another one for tomorrow
Other things I had today were:
Meal #1 @ 6:45am
Since I had to get up early today, I needed to make something quick for breakfast. Although smoothies are quick to make, they do take 20 or more minutes to drink, if you want to do it the right way – “chewing” each sip. So, I started the day with a chocolate chia pudding. The recipe and pictures for which, can be found in my day 17 of raw food trial post.
Meal #2 @ 12:15pm
For lunch, I had Buffalo Bites. A superb prepared raw meal that I had purchased at a local health food store. The picture and more information about this entree can be found in the raw food trial day 13 post.
Meal #3 @ 7:30pm
I was not very hungry tonight, so I was leaning towards a green smoothie. But since a smoothie is mostly fruit, and I did not want to have a lot of sugar in the evening, I decided to have a salad instead.
Medium salad
This simple salad consisted of:
- 5 oz of mixed baby greens
- 1 cucumber
- 1 tomato
- dressing made from 1 avocado and juice of 1 orange
Today I had the following snacks:
- 10 baby carrots
- small handful of pumpkin seeds
- half a bag of kale tempuraw
- 1 raw brownie, mentioned earlier
- 1 date
On to day 21…
