Raw food trial – day 11

This was a great day for three reasons.

First of all, after having nearly winter like weather for the past few days here in NJ, today was sunny with temperatures in the mid-60s. Working most of the day with the windows open was a nice change of pace, and it seemed more fitting with the raw food diet.

Second, what a difference skipping the morning green smoothie makes! Unlike during most of the past 10 days, I had absolutely no problems with excess bathroom trips today. In fact my “schedule” was pretty much the same as on the cooked vegan diet I ate up until 12 days ago.

However, I still want to test whether having a green smoothie in the afternoon will be more agreeable with my body. Such smoothies are the best way of eating large amounts of greens. Juicing is also an option, but in my experience, it takes way too much time to clean the equipment. Another option might be a smoothie that is strained using a nut milk bag – a bag made with a fine mesh that can separate the juice from the pulp.

And finally the third reason why today was a great day – I made an awesome lunch. :-)

Today I had:

Meal #1 @ 8:00am

My first meal of the day was a chia seed porridge made with :

  • 1 cup of chia gel
  • 2 bananas
  • 1.5 tablespoons of lucuma powder

It was excellent and very filling. I think the ratio of the ingredients in this recipe is better than in the one I made few days ago.

Meal #2 @ 12:15pm

For lunch I had delicious.

Yup, that’s about all the description it needs :-) This is how it looked like:

So what is it? Well, it was supposed to be a chocolate smoothie, but it ended up being a very soft pudding instead. I made it with:

  • 2 bananas, I used frozen
  • 1 avocado
  • 3 tablespoons of raw cacao
  • 3 dates, pitted
  • 1 tablespoon of coconut oil
  • 2 tablespoons of lucuma powder
  • 2 teaspoons of maca powder
  • half a teaspoon of cinnamon
  • 1 cup + about 3/4 cup of water

All the ingredients were combined in the Vitamix with 1 cup of water – the amount that the original recipe called for. But because the bananas I used were rather large, and I made some other recipe modifications, it turned out that I needed quite a bit more water, which I kept on adding to keep the blending going. Apparently I did not add enough, since I ended up not with a smoothie, but with a soft pudding – but then again, that’s nothing to complain about :-)

If you make this, please make sure you wear a bib before you taste it…. I wish I did ;-)

Meal #3 @ 7:00pm

My last meal of the day was raw zucchini pasta with marinara – leftovers from yesterday.

The sauce seemed to taste even better than yesterday, when I had it freshly prepared. I think I might make this one ahead of time from now on, to let the flavors of all the ingredients mix through together.

Today I needed very few snacks, thanks to the filling breakfast and lunch:

  • 10 strawberries
  • half a bag of kale tempuraw
  • about 20 green grapes
